This summer my daughter made us a breakfast burrito. It was so delicious, but it was too much. She used a larger tortilla. I thought how could I take her amazing ingredients and scale it down.

I started with 1 egg, 1 breakfast sausage, red pepper and spinach. Once that was done, I sautéed my tortilla.

Once that was done I added my ingredients to one 1/2 of the tortilla. I did this on medium heat.

When the ingredients were added, I folded the tortilla over in 1/2.

I let the cheese melt while the tortilla continued to cook. I used my spatula to gently press down. The cheese helped the tortilla to adhere. It can be covered.
When it was all done I cut in 1/2. It’s easier for me to eat. This size burrito

This is my new favorite breakfast! Hope you get a chance to try to see if you like. You can substitute any ingredient, bacon for the sausage or chorizo. Any vegetables can be added, I used red pepper & spinach. You can get creative & use mushrooms, peppers, onions, spinach or maybe kale or a lettuce. The possibilities are endless. I used salsa on my tortilla as well.
